Coushatta Casino Resort Reopens Big Sky Steakhouse with a Fresh Look
Dining reservations are now open for dates starting August 4.
The Coushatta Casino Resort announces the eagerly awaited grand reopening of the Big Sky Steakhouse on Monday, August 4. This cherished establishment, a favorite for over three decades, is debuting a complete renovation inspired by the Acadian culture of Southwest Louisiana.
The revamped Big Sky Steakhouse embraces the rich culinary heritage of the area, offering a menu with premium dry-aged steaks like the 24oz Cowboy Cut Bone-In Ribeye, as well as Gulf seafood dishes such as pan-seared black drum and Red Snapper Calcasieu. The menu also highlights traditional Louisiana offerings like oxtail gravy on creamy mashed potatoes. Favorites include fried green tomatoes topped with lump crabmeat and crawfish sourced from local farms, alongside the Big Sky Burger made from dry-aged beef.
Chef Matthew Beard expressed, “Our mission is to showcase the essence of Louisiana within a steakhouse environment. With deep local connections, leading the Big Sky Steakhouse team is personal to me. Our unique cuts, dry-aging methods, and dedication to Louisiana flavors ensure that each plate is exceptional.”
A native of Oberlin, Chef Beard honed his skills at Le Cordon Bleu in Austin and Scottsdale, known for his innovative culinary concepts throughout the Coushatta property. He blends culinary creativity with local pride in the Big Sky kitchen.
The redecorated space pays homage to the region’s heritage, featuring repurposed 150-year-old doors, handcrafted woodwork, bespoke antiques, and customized lighting. Guests can enjoy intimate dining in cozy booths, alongside a spacious dining area complete with a grand fireplace.
Local artisans contributed significantly to the renovation, with the artwork selected from Louisiana, including pieces from renowned New Orleans photographer Frank Relle. The new Mirror Bar, adorned with over 40 antique mirrors from across the South, serves the full dining menu along with signature craft cocktails, such as the Smoked Old Fashioned and the dramatic Voodoo Smoked Tiki Dreams.
