Derek Stevens, the owner and CEO of Las Vegas casinos, discussed how dining trends are changing in the city as tourism numbers decline. Many visitors have raised concerns about the high cost of food in this popular vacation spot.

During a recent meeting with the Las Vegas Convention and Visitors Authority (LVCVA), officials discussed various factors that have led to a decrease in tourism this summer. Steve Hill, the president of LVCVA, pointed out that tariffs are affecting both returning and potential visitors, particularly noting a decline in tourists from Canada.
“Some of the decisions our administration has made regarding international relations have impacted tourism,” said Hill, as reported by local news.
High Prices and Their Impact
Commenting on the situation, Derek Stevens remarked, “Some people are feeling that Las Vegas may be pricing itself out.” He explained that the affordability of meals has changed significantly, stating, “The days of cheap buffets are largely behind us.” This shift reflects broader trends in the city as it evolves.
Challenges in the Restaurant Industry
Stevens noted the complexities facing Las Vegas tourism, emphasizing that the dining experience is becoming more competitive. Visitors are eager for convenience but are also seeking new experiences. The Culinary Workers Union recently signed contracts that have led to increased operational costs for casinos. Pappageorge, a union leader, indicated that the restaurants have been limiting hiring and reducing part-time hours, which could ultimately affect full-time positions.
Consumer Pushback
Many industry experts have reported that guests are resisting high prices for basic amenities, such as $18 bottles of water and $37 martinis. Despite these challenges, Stevens maintains a positive outlook, noting that Las Vegas is adapting and reinventing itself as a viable destination for all budgets.
